上海市预包装食品营养标签调查及准确度初探

【摘要】:营养标签能够给购买者提供食物营养成分信息和特征,,是指导消费者正确选择食品的有效工具,也是规范企业行为、确保公平贸易的有效手段。近年国内外也纷纷进行立法工作。我国于2007、2011年先后颁布《食品营养标签管理规范》和《预包装食品营养标签通则》,这对我国食品营养标签管理意义重大。 本课题针对上海市预包装食品营养标签标示率和准确率开展研究,采用食品标签和包装调查(FLAPS)法,在上海市4家大型超市以拍照、抄写或购买的方式获取营养标签信息。应用SPSS20.0软件进行统计分析,并且同08年上海市调查结果进行统计学比较。同时,采用国家标准GB/T5009.5-2010、GB/T5009.6-2003等和规范方法对部分样品的宏量营养素进行实验室检测,对特殊指标如反式脂肪酸和胆固醇进行送样检测。采用卡方检验分析不同品牌属地间合格率的差异。 结果表明,共调查7大类1995件预包装食品,营养标签标示率为54.8%,较《规范》实施前(2008年调查)的标示率(35.4%)有明显的提高;营养成分表中能量和四项核心营养素的标示率均高于98%,饱和脂肪、反式脂肪、铁的标示率较低,分别为11.5%、7.0%和10.7%;大陆品牌食品的营养标签标示率(45.8%)明显低于港台(67.0%)与国外品牌(65.7%);从1995件预包装食品中抽检200件样品,进行准确率检测,其中标有营养标签的样品125件。蛋白质的合格率为94.4%,脂肪的合格率为96.0%,碳水化合物的合格率为100%。港台,国外和大陆品牌的预包装食品蛋白质营养标签准确率分别为95.0%,94.6%和94.1%。经卡方检验,p0.05,没有显著性差异。港台,国外,大陆品牌预包装食品脂肪营养标签准确率分别为95.0%,97.3%和95.6%。经卡方检验,p0.05,没有显著性差异。 在77件标有反式脂肪酸含量的预包装食品中,抽取56件样品送检,其反式脂肪酸含量均小于300mg/100g,合格率100%。 《食品营养标签管理规范》实施后,上海市预包装食品营养标签标示率有所提高,营养成分标示值准确性较高,具有很高的可信度。但是,研究过程中依然发现存在的不少问题,为了完善我国营养标签管理,从而充分发挥其合理选择食物和促进健康的作用,食品生产企业、消费者和政府职能部门应该共同努力。
[Abstract]:Nutrition label can provide food nutrition information and characteristics to buyers. It is an effective tool to guide consumers to choose food correctly. It is also an effective means to regulate enterprise behavior and ensure fair trade.In recent years, domestic and foreign legislation has been carried out.In 2007 and 2011, China promulgated the "Food Nutrition label Management Standard" and the "General principles of Nutrition labelling of prepackaged Food", which is of great significance to the management of food nutrition label in China.In this paper, the rate and accuracy of nutrition labeling of prepackaged food in Shanghai were studied. The method of food labeling and packaging investigation was used to obtain nutrition label information in 4 large supermarkets in Shanghai by taking pictures, copying or purchasing.The statistical analysis was carried out by using SPSS20.0 software and compared with the results of Shanghai survey in 2008.At the same time, the national standard GB / T5009.5-2010GB / T5009.6-2003 was used to detect macronutrients in some samples in laboratory, and some special indexes such as trans fatty acids and cholesterol were tested.Chi-square test was used to analyze the difference of pass rate among different brand properties.The results showed that the nutrition labeling rate of 1995 prepackaged foods in 7 categories was 54.8, which was significantly higher than that before implementation (survey in 2008).The labeling rates of energy and four core nutrients in the nutrient composition table were higher than those of 98%, and the labeling rates of saturated fat, trans fat and iron were lower.The nutrition label rate of mainland brand food was significantly lower than that of Hong Kong and Taiwan Taiwan 67.07.The samples were sampled from 1995 prepackaged foods and tested accurately, among which 125 samples were labeled with nutrition label.The qualified rate of protein, fat and carbohydrate is 94. 4, 96. 0 and 100, respectively.The accuracy rate of protein nutrition labeling of prepackaged foods by Hong Kong and Taiwan, foreign and mainland brands was 95.6% and 94.1%, respectively.By chi-square test, there was no significant difference (P 0.05).The accuracy rate of fat nutrition label for prepackaged foods of Hong Kong and Taiwan, foreign countries and mainland was 95.0% and 95.6% respectively.By chi-square test, there was no significant difference (P 0.05).In 77 prepackaged foods marked with trans fatty acids, 56 samples were taken for examination. The contents of trans fatty acids were less than 300 mg / 100 g, and the qualified rate was 100%.After the implementation of "Food Nutrition label Management Standard", the labeling rate of pre-packaged food in Shanghai has been improved, and the accuracy of nutrition label value is higher, which has a high reliability.However, in the course of the research, many problems still exist. In order to improve the management of nutrition label in our country, so as to give full play to its role of reasonably selecting food and promoting health, the food production enterprises,Consumers and government departments should work together.
