【摘要】：哈尔滨北临俄罗斯,地缘优势使哈尔滨俄式西餐厅设计独具特色,历史上出现的大规模人口迁移也为俄式西餐厅在哈尔滨的发展创造了条件,随着社会发展,俄式西餐厅的空间布局和装饰特色等方面在发展中逐渐演化。了解和研究哈尔滨俄式西餐厅的发展变化,在弘扬俄式西餐的历史文化性、体现哈尔滨俄式西餐的地域特色性、彰显俄式西餐厅设计的时代互融性等方面具有重要的理论意义和实践意义。通过实地调研和访谈,确定本文的研究对象为哈尔滨15个有特色的俄式西餐厅。通过研究方法的综合,以现场拍摄的实体照片和专业软件绘制的图片等形式,对俄式西餐厅建筑的室内外空间演变情况进行有效提取,并展开系统研究。首先,对相关概念进行界定,通过建筑符号学等理论的引入,分析其设计风格与文化内涵；进而通过对国内外文献和餐饮空间的实例研究,对我国相关领域的研究成果进行总结。其次,对俄式西餐厅在哈尔滨的起源与文化、发展与变迁、时代与显存进行归纳整理通过历史资料的整合和现场调研,从社会经济、城市发展等宏观层次对餐厅发展的社会发展、从民俗特色和人文关怀的地域文化、人文关怀和民俗特色的消费特色以及建筑风格的功能法然和艺术精美方面对餐厅的发展因素进行解析。然后,对俄式西餐厅空间组织演变情况进行研究,主要包括用餐功能区、配套服务区和工作管理区等,注重研究空间的布局、形式等变化；从餐厅立面的装饰元素对其建筑风格进行界定,并对风格演变情况进行总结；最后,详细研究了俄式西餐厅空间构成要素的演变情况。着重研究外墙、内墙、顶棚和装饰等空间界面和门、窗、柱等构件的变化,此外,结合雕塑、绘画等室内装饰和室外广告牌等方面,从多角度对餐厅空间艺术的演变情况展开系统研究。为今后俄式西餐厅的设计方向提供参考和借鉴,进而继承和创新建筑设计发展。
[Abstract]:Harbin faces Russia to the north, and its geographical advantages make the design of its Russian Western restaurants unique. The large-scale population migration that has occurred in history has also created conditions for the development of Russian-style Western restaurants in Harbin, with the development of society. The space layout and decorative features of the Russian-style Western Restaurant are gradually evolving in the process of development. To understand and study the development and changes of the Russian western restaurant in Harbin, to carry forward the historical and cultural character of the Russian and western food in Harbin, and to reflect the regional characteristics of the Russian western food in Harbin. It is of great significance in theory and practice to show the time intermingling of the design of Russian western restaurants. Through field investigation and interview, the research object of this paper is 15 Russian-western restaurants with characteristics in Harbin. Through the synthesis of the research methods, the evolution of the indoor and outdoor space of the Russian-style western restaurant building is extracted effectively in the form of the physical photos taken on the spot and the pictures drawn by the professional software, and the systematic research is carried out. First of all, to define the relevant concepts, through the introduction of architectural semiotics theory, analysis of its design style and cultural connotation; then through the domestic and foreign literature and restaurant space examples, The research results in related fields of our country are summarized. Secondly, the origin and culture, development and change, time and memory of the Russian western restaurant in Harbin are summarized and sorted through the integration of historical materials and field investigation, from the social and economic point of view. At the macro level, such as urban development, the social development of restaurants is based on the regional culture of folklore and humanistic care. The development factors of restaurant are analyzed in the aspects of humanistic care and folk characteristics, as well as the function of architectural style and fine art. Then, the evolution of the space organization of the Russian Western restaurant is studied, including the dining function area, the supporting service area and the work management area and so on, paying attention to the change of space layout and form. From the restaurant facade decoration elements to define its architectural style, and the evolution of the style of summary; finally, a detailed study of the evolution of the Russian restaurant space elements of the evolution. Focusing on the external wall, interior wall, roof and decoration and other spatial interfaces and doors, windows, columns and other components, in addition, combined with sculpture, painting and other interior decoration and outdoor billboards, A systematic study on the evolution of the art of restaurant space is carried out from various angles. It provides reference and reference for the design direction of the Russian western restaurant in the future, and then inherits and innovates the architectural design development.
