大陆访港游客饮食消费者偏好的实证研究

【摘要】:随着中国大陆往来香港地区游客人数的逐年增加,促使其在港消费总金额的相应增加,其中在饮食领域的消费占总消费金额的比例相当大,使得香港饮食业快速递增,为香港经济的发展做出了巨大贡献。中国大陆地区游客在港饮食消费者的个人偏好对香港饮食业有着巨大影响。对香港饮食业界和市场方面的研究学者来说,大陆游客的饮食消费偏好的研究工作就变得非常重要,同时加强对偏好的研究也是在这个竞争激烈的行业里保持优势的最佳办法。本文在保证研究效度的基础上,利用因子分析法设计项目问卷,通过科学方法收集800个问卷数据。用因子分析法研究证实了5个维度的客户偏好,使用多重回归分析法,得出了对应各种因素的重要性顺序,即食品特色、服务质量、口碑、价格和消费场所环境。
[Abstract]:With the annual increase in the number of tourists from the mainland to and from Hong Kong, the corresponding increase in the total amount of their consumption in Hong Kong, in which the consumption in the catering sector accounts for a considerable proportion of the total amount of consumption, has led to a rapid increase in the catering industry in Hong Kong. It has made great contributions to the economic development of Hong Kong. The preferences of mainland Chinese tourists in Hong Kong have a huge impact on Hong Kong's catering industry. For Hong Kong food industry and market researchers, the study of mainland tourists' preference for food consumption becomes very important, and strengthening the research on preference is the best way to maintain an advantage in this competitive industry. On the basis of ensuring the validity of the research, the project questionnaire is designed by factor analysis, and 800 questionnaires are collected by scientific method. The factor analysis method was used to confirm the customer preference of five dimensions. By using multiple regression analysis, the importance order of the corresponding factors, namely food characteristics, service quality, word of mouth, price and the environment of the place of consumption, was obtained.
