【摘要】：本课题以中国汉式厨房为研究对象，尝试对其起源和发展历程进行梳理和总结，结合相关的历史时代背景，分析在形成和发展过程中对其产生的影响因素，如政治、经济、居住方式、饮食习惯、烹饪方法、思想观念和技术更新等方面，并对厨房的功能结构布局、内部设施的变化进行研究。本课题以历史时间的进展为依据，对中国汉式厨房在起源、初步发展、成为独立的操作空间、发展定型、近现代发展以及未来发展趋势几个发展阶段进行概括阐述。基于本课题的研究内容是厨房，因此把厨房内重要的设施灶作为研究的重点，对其在形制、功能特点、排烟设施等方面进行具体分析，，特别是形成独立厨房时期和发展定型时期的灶具。本课题对中国厨房的发展历程进行整理归纳，并对未来中国厨房发展趋势做出大胆地预测，希望可以对独具烹饪特色的中国厨房的发展有所裨益。
[Abstract]:This topic takes Chinese kitchen as the research object, tries to carve out and summarize its origin and development course, and analyzes the influence factors, such as politics, economy, in the process of formation and development, combined with the relevant historical and historical background. Living style, eating habits, cooking methods, ideas and techniques, and so on, and the functional structure of the kitchen layout, changes in the internal facilities. This topic is based on the progress of historical time, The origin, initial development, independent operation space, development stereotype, modern development and future development trend of Chinese Chinese kitchen are summarized and expounded. Based on the research content of this subject is kitchen, Therefore, taking the important kitchen stoves as the focus of the research, the paper makes a concrete analysis on the shape, functional characteristics, smoke exhaust facilities and so on. In particular, it forms the cooker in the period of independent kitchen and the period of development. This subject summarizes the course of development of Chinese kitchen, and makes a bold prediction of the development trend of Chinese kitchen in the future. I hope it will benefit the development of Chinese kitchen with unique cooking characteristics.
