中日茶史溯源及抹茶产业发展前景剖析

【摘要】：中国和日本作为隔海相望、一衣带水的邻邦,自古以来就在政治、经济、宗教、艺术、文化等各个领域有着频繁的往来与交流。尤其是自隋唐以来,从政治制度到语言文字,从吃穿习俗到建筑规划,无一不互相渗透和影响着。而中日间的茶文化交流,更可以说是两国历史交流历程中的一颗光彩夺目的明珠。中国是茶的故乡,中国的茶文化历史悠久,博大精深。而随禅学东渡到日本后,与日本的民族文化进行了融合,形成了独具特色的日本茶道文化。为了能更深入地了解中日茶文化,本文在对比中日茶史和茶科技发展历程的基础上,认为茶文化与茶科技是茶产业腾飞的翅膀。通过深入研究,本文得出以下结论：第一,中日两国茶文化的相同之处在于：都注重茶的精神文化内涵,都与本国的民族文化密切相关。而不同之处则是两国茶文化的形成过程不同,背景文化不同,有源流之别。第二,中日两国由于自然、地理条件的差异以及传统文化因素和社会发展的影响,导致今天中日两国在茶的种类及其加工工艺上也有很大的区别。中国受益于幅员辽阔、资源丰富的地理环境,茶类丰富多样。而日本虽受地理条件的制约单一地主产绿茶,但得益于对茶道的有效传承,发展了具有本民族特性的茶产品和茶道文化。第三,可谓“墙内栽花墙外开”的抹茶如今回流到中国,各式周边产品琳琅满目,也成为国人了解日本文化的窗口之一。但目前因为没有国家标准和行业标准,导致抹茶市场上鱼目混珠。因此抹茶作为一种新型食品添加剂,以其天然、保健、环保的特点,在食品工业领域中应该是会拥有十分美好的应用前景的。
[Abstract]:China and Japan, as neighbors across the sea, have had frequent exchanges in politics, economy, religion, art, culture and other fields since ancient times. Especially since the Sui and Tang dynasties, from the political system to the language, from eating and dressing custom to architectural planning, all of them have penetrated and influenced each other. The tea cultural exchange between China and Japan can be said to be a brilliant pearl in the history of the two countries. China is the hometown of tea, Chinese tea culture has a long history and profound. After Zen went east to Japan, it merged with Japanese national culture and formed a unique Japanese tea ceremony culture. In order to understand the tea culture of China and Japan more deeply, this paper compares the history of tea between China and Japan and the development of tea technology, and points out that tea culture and tea technology are the wings of tea industry. Through in-depth study, this paper draws the following conclusions: first, the similarities of tea culture between China and Japan lie in: both pay attention to the spiritual and cultural connotation of tea, and are closely related to their national culture. The difference is that the formation process of tea culture in the two countries is different, the background culture is different, and the origin is different. Second, due to the differences of natural and geographical conditions and the influence of traditional culture and social development, there are also great differences between China and Japan in tea varieties and processing techniques. China benefits from a vast, resourceful geographical environment, rich in tea. However, Japan, restricted by geographical conditions, mainly produces green tea, but thanks to the effective inheritance of tea ceremony, it has developed tea products and tea culture with its own national characteristics. Third, it can be described as "wall planting flowers outside the wall," the tea is now back to China, a variety of peripheral products, but also become one of the windows for people to learn about Japanese culture. But now because there is no national standard and industry standards, resulting in matcha market mixed ball. Therefore, as a new type of food additive, matcha, with its natural, health and environmental characteristics, should have a very bright future in the field of food industry.
