山东省鸡蛋及其加工制品的消费调研

【摘要】:为分析山东省城乡居民的鸡蛋及其制品消费行为特征,研究影响鸡蛋消费的关键因素,对鸡蛋及其加工制品的消费状况进行问卷调查。以青岛、济南、潍坊、临沂、聊城五地市的消费者为主要对象,以调查问卷的形式对鸡蛋的购买地点、购买频率、质量安全、价格及对鸡蛋加工制品的了解等方面展开调研。结果显示:各地消费者在超市和零售点购买鸡蛋是消费的两大方向;购买频率集中在2~4周1次;鸡蛋消费价格基本趋势为5~10元/500 g;购买鸡蛋时最为关心的还是内在的质量安全问题;在对鸡蛋的用途方面的了解中最熟悉的是添加在蛋糕等面点中,其中营养成分被广泛了解的是卵磷脂。从调研结果分析,建议通过网络销售等新型模式降低直销点的成本、提高生产要求、加强监管力度,严格保证新鲜鸡蛋的质量安全、促进龙头企业与养殖户及科研部门联合,对鸡蛋进行深加工并进一步促进鸡蛋及其制品的消费市场。
[Abstract]:In order to analyze the characteristics of consumption behavior of eggs and their products among urban and rural residents in Shandong Province, and to study the key factors affecting the consumption of eggs, a questionnaire survey was conducted on the consumption of eggs and their processed products. Taking the consumers of Qingdao, Jinan, Weifang, Linyi and Liaocheng as the main objects, the paper investigated the purchase place, frequency, quality and safety, price and understanding of egg processing products in the form of questionnaire. The results show that buying eggs in supermarkets and retail outlets is the two main directions of consumption, the buying frequency is concentrated in 2 ~ 4 weeks, the basic trend of consumption price of eggs is 5 ~ 10 yuan / 500 g; In the understanding of the use of eggs, the most familiar thing is to add them to cakes and other pasta, in which the nutrition is widely known as lecithin. From the analysis of the investigation results, it is suggested to reduce the cost of direct selling points through new models such as network sales, raise production requirements, strengthen supervision, strictly guarantee the quality and safety of fresh eggs, and promote the association of leading enterprises with breeders and scientific research departments. The further processing of eggs and the further promotion of the consumption market of eggs and their products.
