和刻本《事林广记》饮馔部分研究

【摘要】:《事林广记》作为宋元时期的一部日用百科全书类型的民间类书,自其问世以来,,受到了很多的关注,但大多只将其作为工具书来使用,很少进行专门的研究。近些年,国内外学术界开始针对《事林广记》本体进行研究,并形成了一定的规模,然而对于其中饮馔部分研究甚少,甚至是一片空白。因此,本文以《事林广记》饮馔部分作为研究对象,希望能够引起对《事林广记》的进一步关注。 因此本文拟通过分析和刻本《事林广记》之编纂特点,对其本体进行研究;并以和刻本《事林广记》为底本,元至顺本为参照本对其饮馔部分进行比较,校勘文字异同,并分析其原因。还将元至顺本《事林广记》与元无名氏《居家必用事类全集》庚、己两集饮馔部分进行对比,分析两部著作的关系,并对《事林广记》饮馔部分涉及的一些名物进行考证,并最终分析了其饮馔部分有着其独特之价值,它不仅保存了当时很多食物之做法,更是独创分类法,并且对于其中许多在当今慢慢消失之调味品之作法更是得到了较好的保留,对于我们今天之饮食做法不失为一个很好的教材。
[Abstract]:Lin Guangji, as a folk book of daily encyclopedia in Song and Yuan dynasties, has received a lot of attention since its publication, but most of them are only used as reference books, and few special studies have been carried out. In recent years, the academic circles at home and abroad began to study the Noumenon of Lin Guangji, and formed a certain scale. However, the research on the part of drinking dishes is very little, or even a blank. Therefore, this paper takes the part of Lin Guangji as the research object, hoping to arouse further attention to Lin Guangji. Therefore, this paper intends to study its ontology by analyzing and engraving the compilation characteristics of Lin Guangji. Taking Lin Guangji as the base and Yuan to Shunben as the reference, this paper compares the drinking dishes, collates the similarities and differences of the characters, and analyzes the reasons. This paper also compares Yuan to Shunben's "Lin Guangji" with Yuan Doe's "complete Collection of things to be used at Home" Geng, and analyzes the relationship between the two works, and makes a textual research on some famous things involved in the part of "Lin Guangji" drinking dishes. Finally, it is analyzed that the drinking part of the dishes has its unique value, which not only preserves a lot of food practices at that time, but also is an original classification, and has been well preserved for many of the condiments that are slowly disappearing today. It is a good textbook for our diet today.
