张家界饮食文化资源在乡村旅游中的利用调查

【摘要】:发展乡村旅游对中国社会主义新农村建设具有重要作用。本文基于学术理论研究进展和社会发展实际需要,以湖南省张家界市两区两县为实际案例区,采用实地调研等方式获取基础资料研究张家界市乡村旅游发展中乡村饮食文化资源利用现状,旨在保护和传承张家界乡村饮食文化,以及促进张家界乡村旅游更科学的发展。我国乡村旅游研究经历了萌芽阶段、发展阶段、成熟阶段。新时期乡村旅游研究要结合乡村发展实际,进行理论整合和升华,推进实证研究服务于乡村旅游转型升级。乡村文化是乡村旅游研究更要关注点,尤其是引领更好传承与保护乡村文化。旅游者在乡村旅游中对饮食已超越生存所需,而是对饮食文化品位提出更高需求,需要在乡村旅游中进一步挖掘和利用饮食文化资源。张家界乡村旅游形式以个体经营农家乐和农庄为主,饮食产品主要为烹饪菜品,主要菜品与城市大同小异,乡村自制菜未充分展示,缺乏体验项目。本地居民对张家界饮食文化资源消费意向之长期习惯赋予了张家界饮食文化之“好客文化”,对饮食文化资源经济利用开发有不同的判断。旅游者对张家界饮食文化资源消费意向之短期期待赋予了张家界饮食文化之“神秘文化”。互联网使得旅游者对张家界饮食文化资源有了前期期待,神秘文化更多也是互联网的宣传效果。旅游者对张家界饮食文化资源消费更多的是饮食产品(美食),对饮食制作、饮食效果、饮食礼仪并未有明显的期待,但如果有这些方面的旅游供给,旅游者表示乐意尝试。综合表明张家界饮食文化资源在乡村旅游中的利用仍然处于初级阶段。张家界饮食文化资源在乡村旅游发展中的科学利用,需要张家界农家乐等形式乡村旅游点对饮食文化资源利用向乡村性回归,张家界旅游活动中必须大力增加乡村饮食文化资源的利用与体验,应该依托乡镇企业科学开发、保护和更好传承乡村饮食文化资源。
[Abstract]:The development of rural tourism plays an important role in the construction of China's new socialist countryside. Based on the progress of academic theory and the actual needs of social development, this paper takes two districts and two counties of Zhangjiajie City, Hunan Province as the actual case area. In order to protect and inherit the rural food culture of Zhangjiajie, the paper studies the utilization of rural food culture resources in the development of rural tourism in Zhangjiajie by means of field investigation and other methods. And to promote the more scientific development of rural tourism in Zhangjiajie. The study of rural tourism in China has gone through the embryonic stage, the development stage, the mature stage. The study of rural tourism in the new period should combine with the reality of rural development and carry out theoretical integration and sublimation. Rural culture is the focus of rural tourism research, especially leading to better inheritance and protection of rural culture. Tourists in rural tourism food has exceeded the need for survival. Instead of putting forward higher demand for food culture grade, we need to further tap and utilize dietary cultural resources in rural tourism. Zhangjiajie rural tourism forms mainly in the form of individual management of farm music and farms, and the food products are mainly cooking dishes. The main dishes are much the same as those in the cities, and the rural homemade dishes are not fully displayed. Lack of experience projects. The long-term habit of local residents on the consumption intention of Zhangjiajie food culture resources has given Zhangjiajie a "hospitable culture" of the diet culture, and there are different judgments on the economic utilization and development of the dietary cultural resources. The short-term expectation of the consumption intention of Zhangjiajie's food culture resources has given Zhangjiajie a "mysterious culture" of its diet culture. The Internet has made tourists have a preliminary expectation of Zhangjiajie's food culture resources. More mysterious culture is also the propaganda effect of the Internet. Tourists consume more of Zhangjiajie food cultural resources is diet products (food, food production, diet effect, diet etiquette has no obvious expectations, But if there is a supply of tourism in these areas, Tourists are willing to try. The comprehensive results show that the utilization of Zhangjiajie dietary cultural resources in rural tourism is still in the initial stage. The scientific utilization of Zhangjiajie dietary cultural resources in the development of rural tourism, It is necessary for the rural tourism spots such as Zhangjiajie Nongjiale and other forms to return the utilization of food cultural resources to the rural areas. In Zhangjiajie's tourism activities, it is necessary to greatly increase the utilization and experience of rural dietary cultural resources, and should rely on the scientific development of township enterprises. Protection and better inheritance of rural food and cultural resources.
