吉林梅河酒业“中和烧锅”清理发掘报告

【摘要】：梅河酒业位于梅河口市海龙镇东街,坐落于海龙镇通往营白一级公路的西侧,其前身"中和烧锅"的遗迹主要分布在北侧厂区院内。"中和烧锅"始建于清光绪十四年,该作坊遗留有较为丰富的遗迹和遗物。2011年,对"中和烧锅"的一些现存遗迹进行了为期30余天的调查和发掘工作,清理了"古井"和"老发酵窖池"等遗迹,发现了民国至建国初期的一批税票、流水账及营业执照等文物,并对"中和烧锅"的重要遗迹如酒海、酒窖作了进一步调查测绘。"中和烧锅"是目前关东地区保存最为完整的清代白酒作坊遗存之一,现存的木质酒海、古井、发酵窖池及酒窖构成了传统白酒作坊的完整体系。本次清理出的这批与酿造相关联的井、池遗迹,其土木、土石相结合的简易构建方式,展现了近代城镇白酒作坊设备的相对原始,同时也显示了其对传统酿造工艺的传承。
[Abstract]:Meihe wine industry is located in the east street of Hailong town, Meiehekou city, located in the west side of Hailong town leading to the first class highway of Yingbai, and the vestige of its predecessor, Zhonghe cooker, is mainly distributed in the yard of the north side of the factory area. " The Zhonghe cooker was built in the Guang Xu of Qing Dynasty for 14 years. The workshop left a wealth of relics and relics. In 2011, more than 30 days of investigation and excavation of some existing remains of the Zhonghe cooker were carried out. The relics of "ancient wells" and "old fermenting pits" were cleared, and a number of cultural relics such as tax tickets, running water accounts and business licenses were found from the Republic of China to the early days of the people's Republic of China, and the important relics of "neutralizing and burning pots" such as wine sea and wine cellar were further investigated and mapped. " Zhonghuanjiao "is one of the most complete remains of liquor workshops of Qing Dynasty in Guandong area at present. The existing wooden liquor sea, ancient wells, fermentation pits and wine cellars constitute the complete system of traditional liquor workshops. The simple construction method of this batch of wells, ponds, civil engineering, soil and rock associated with brewing shows the relative primitive equipment of modern town liquor workshop, and also shows its heritage to the traditional brewing technology.
